Industrialization of traditional cocada in the canton of Portoviejo as an agroindustrial development alternative

Abstract

Cocada is a very typical product of the Manabí province. Its production has been artisanal for a long time, which has limited its standardization and access to more formal markets. This study aimed to evaluate the feasibility of industrializing traditional cocada in the Portoviejo canton from a technical, commercial, and financial perspective, as a way to strengthen the local agro-industry. The research was conducted using a quantitative approach, describing and analyzing data. A survey of 384 people who could potentially purchase cocada was conducted. A production plan was designed, and its profitability was analyzed. Metrics such as Net Present Value, Internal Rate of Return, and payback period were used. The results indicate high acceptance of cocada, especially the coffee-flavored variety. People want it available in industrialized formats. From a technical standpoint, a semi-industrial production process is feasible. This would guarantee the product's quality and safety without altering its traditional flavor. From an economic standpoint, the project presents favorable profitability indicators. It has a positive Net Present Value, an Internal Rate of Return higher than the discount rate, and an investment recovery period of less than three years. In short, the traditional coconut candy can be industrialized sustainably in Portoviejo. This would help add value, strengthen the local economy, and preserve the product's cultural identity.
