Abstract

  Production processes in the artisanal field occur empirically, traditionally without prior knowledge of techniques or instruments that facilitate work as a source of socio-economic development, which is why this research aims to propose a tool to determine costs of candy production in the General Association of Artisans of the Rocafuerte canton. These investigation were delimited by means of surveys applied to the members of the Association to specify the shortcomings in the work that they carry out regarding the preparation of sweets, resulting in an instrument detailing the methods and steps to follow to execute the daily work of the artisan artisans; The methodology used was non-experimental, with the Inductive-Deductive, Descriptive, Historical and Field methods, with techniques such as surveys, interviews and observation guides. The results obtained were reflected in Excel tables for a better understanding; An interview was also conducted with the president of the association, resulting in an imbalance in the organization and preparation of sweets.   Keywords: instrument; costs; labor; raw material.
