The instruments that are declared in the scientific literature to evaluate socio-emotional competencies do not offer full guarantee for this, associated constructs are evaluated and not this competency directly, which limits their characterization in the context of the demands of the action and its actual execution. The application of standardized techniques expresses the approximation to knowing the behavior and functioning of the construct in a range of figures that locate a group of subjects in a trend way, by patterns and estimates. Here the understanding of its nature, of the phenomenological, of the properly psychological, is obviated, as this type of competence demands due to its commitment to the emotional sphere of the subject. Therefore, this research aims to offer theoretical-methodological references for understanding the development of dimensions of socio-emotional competence in quality performance from the subjective perspective. A qualitative study is carried out with 12 gastronomic clerks who work in a city hotel with international administration, using the semi-structured interview, the semantic differential, the completion of sentences and stories in the methodology. The results are analyzed through content analysis and content triangulation. The main psychoeducational needs are discovered in emotional awareness, emotional regulation and emotional expression to promote quality performances. The interrelationships that are revealed in the discourse of the participants could be directing the development processes. Ways to develop these dimensions of socio-emotional competencies are recognized in accordance with the findings obtained.
